Stuffed Jalapenos

Stuffed Jalapenos

Cut  15 peppers in half and remove seeds
Boil water ~ place peppers in for 5 minutes, just long enough to take some of the heat out of them.
Pour hot water off and quickly place in cold water~
Remove from water, blot dry.

Rub large cookie sheet with a generous amount of olive oil (this gives it a great flavor)

Spread 8 oz package cream cheese in pepper halves.
Cook bacon and break into long strips, placing pieces as desired in the cream cheese.

1 cup bread crumbs
1 teaspoon garlic salt or to taste
2 Tablespoons Parmesan cheese
1/2 teaspoon parsley
Mix bread crumbs, garlic salt, Parmesan cheese, & parsley together.
Slice an onion into rings, then slice rings in half, or cut to desired length.  And place 1 piece of onion in each pepper half, pushing it in the cream cheese.  (part in and part out)  Sprinkle crumb mixture over each pepper.  Sprinkle a little freshly ground pepper over the top.

Place on baking sheet and cook at 375 until top is crispy but not burnt!

Eat as soon as they are cool enough.  They have a really toasty good flavor while they are hot.  Later on they are not as good.  But are still a good snack.

Enjoy!!
