Acini De Pepe Salad


Acini De Peppe Salad

Combine and cook over medium heat, stirring constantly until thick and cooling completely:
1 cup sugar
2 Tablespoons flour
1/2 teaspoon salt
1 3/4 cups pineapple juice
3 egg yolks, beaten

Boil 1 3/4 cup Acini macaroni in boiling water 5-8 minutes.  (Until tender)  Blanch and cool.  Place in a large bowl.  Add cooked mixture and seal.  Let set overnight in refrigerator.  Mix and add to other ingredients the next morning:
3 cans mandarin oranges
4 cans pineapple tidbits
2 medium bowls of cool whip
My family loves this salad!  It is definitely a family tradition.  This is the 1st time I have placed raspberries on top.  We did it for the picture for some color.  They did taste good too!

  1. It is tiny little macaroni balls. You find it in the macaroni section of your grocery store. However, this does not taste like a macaroni salad. It is a very refreshing fruit salad. This is my favorite salad in the whole world!! Acini is kind of a specialty so if you can't see it right off ask your store manager. It is worth finding!

  4. This is so delicious! My sister learned to make it when she married her italian husband and though I got the recipe, I've never made it! I just remember how amazing it tastes!
