Crispy Fan Potatoes


Crispy Fan Potatoes

Take a nice baking sized Russet potato and scrub well.  Dry with a paper towel.
Next slice thinly, be careful to not slice the potato all the way through.
I place a second cutting board on top of the first cutting board next to the potatoes to keep from cutting all the way through the potatoes. So it stops me and makes it nice and even.
Spray a baking sheet with olive oil.  Then place potatoes on baking dish and bake 20 minutes.  Pull them out and drizzle olive oil on them.  Be generous with your salt and pepper add a dash of garlic salt and then pop back in the oven at 400 degrees until tender.
You can experiment with this recipe.  Any type of seasoning that is your favorite will be great!  The skins are nice and crispy!

This is also great on the BBQ.  I have made these for years on the BBQ.  Scrub your potatoes and slice them up and add a thin slice of onion to each of the slices.  Salt and pepper, wrap it up and BBQ.
