Murphy's Potatoes
Bake 12 Washed Russet potatoes at 400 degrees until tender. (About 1 hour)
Take hot potatoes out of oven and slice down the center. With a spoon carefully remove potatoes without damaging the skins. Place the insides of the potato in a large bowl. (I use my kitchen aid.)
Next add 1 container of sour cream (16 oz)
3/4 cup butter
Several strips of bacon crumbled
2 Teaspoons of Kosher salt
1 teaspoon pepper
2 Teaspoons onion powder
1 1/2 cups chopped mild cheddar cheese
Mix all ingredients together and then spoon back into the potato skins Re-warm them in the oven when ready to eat and enjoy!!
