Stuffed Tomatoes
Stuffed Tomatoes
First, wash tomatoes well. (About 6 or 7 large tomatoes.) Then slice the top off and take the insides out with a melon baller or spoon. Leave a little flesh next to the tomato skin so it doesn't break. Save the insides of the tomato for later. Turn tomatoes upside down on a tray to drain while you prepare the stuffing.
Send through the food processor-
1/4 large onion
1 garlic clove
2 Tablespoons olive oil
Insides of one tomato
In a skillet brown 1 lb hamburger
add your food processor mix
1 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper
insides of tomatoes
After hamburger is browned add
2 cups water
1/2 cup rice
Cook at a slow boil until rice is tender. If you need to add more water that is fine. After the rice is tender turn off heat and add 1 cup shredded cheese of your choice. I used montaray jack and cheddar.
Stir the cheese until it is mixed in the hamburger mixture. Then gently put the hamburger mixture into the tomatoes.
Place in a greased baking dish and bake uncovered at 375 for 30 minutes, or until tomato is tender.
