Potato Skins

Wash a bunch of potatoes.  Then rub them with olive oil and sprinkle with Kosher salt.  Poke holes in them and place on a cookie sheet.  Bake as you usually bake your potatoes.  If you didn't know, this makes your baked potatoes so much tastier and fluffier!
Clean out the potatoes.  I used the insides for Twice Baked Potatoes, Casserole Style: http://thebusybhive.blogspot.com/2012/09/twice-baked-potatoes-casserole-style.html Cook bacon and drain, add to skins and top with cheese.  We like these with Ranch dressing.  I make lots of these and freeze them and then they are handy another day.  Love to have things ready in the freezer.  :o)
Just heat and eat.
