Acini De Pepe Salad


Acini De Peppe Salad

Combine and cook over medium heat, stirring constantly until thick and cooling completely:
1 cup sugar
2 Tablespoons flour
1/2 teaspoon salt
1 3/4 cups pineapple juice
3 egg yolks, beaten

Boil 1 3/4 cup Acini macaroni in boiling water 5-8 minutes.  (Until tender)  Blanch and cool.  Place in a large bowl.  Add cooked mixture and seal.  Let set overnight in refrigerator.  Mix and add to other ingredients the next morning:
3 cans mandarin oranges
4 cans pineapple tidbits
2 medium bowls of cool whip
My family loves this salad!  It is definitely a family tradition.  This is the 1st time I have placed raspberries on top.  We did it for the picture for some color.  They did taste good too!

Shrimp Salad




Shrimp Salad

1 box of noodles (your choice)  I like the mini bow ties.
2 can tiny shrimp
1 cup shredded Cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper
Miracle whip

In a large pan boil water, when it is boiling rapidly add the noodles.  Boil until noodles are tender.
Drain noodles and rinse in cool water.  Place drained and cooled noodles in a bowl and add drained shrimp, cheese, & seasonings.  Add Miracle whip to make it as moist as you prefer.  Mix well.  Put a tight lid on the bowl and let set over night in the refrigerator.

Yummy Fruit Salad

Yummy Fruit Salad

As with everything, everyone wants different sizes of salads.  A fruit salad is very easy to modify the size.  So for this particular salad I will just tell you the ingredients and you can make it as large or as small as you desire.

Mix together:
Cool Whip
Red jello - dry
Fresh Peaches
Grapes
Bananas
Apples

Everything was fresh and in season as this was made for Mom's birthday party in September.  In the winter you can use whatever fruits are in your pantry.  Fruit salad always give a nice touch to any meal.  They are so re-freshing.

Easy Fruit Salad

This salad is great if you are in a hurry and it tastes great too!  Add two cans of fruit with juice.  This salad has a can mandrain oranges and crushed pinapple.  Fruit cocktail is great here, the regular or the melon kind.  Pretty much whatever is in your pantry.  Then add a dry package of lemon or vanilla instant pudding, I used a small one but if you only have large just add more fruit.  Stir and chill.  Note:  Banana's make a great last minute stir in. 
Is that the easiest salad ever?

Yummy Chicken Salad

4 cups (4~5 chicken breasts) cooked and shredded ~ I used canned chicken
16 oz. pkg. macaroni
2 cups red grapes ~ I didn't add these, I should have gone shopping  :o)
4~5 apples cut up
1 can water chestnuts
12 oz. can cashews
1 can drained pineapple tidbits ~ I use the larger one
2 tsp. dried onion
1 cup cut celery ~ I didn't use

Mix 1 bottle of Draft Coleslaw Dressing and 1 cup Miracle Whip.  Mix everything but apples and cashews.  Add coleslaw and Miracle Whip.  Chill for a couple hours.  Leave some dressing to add to the salad right before serving for a creamier taste.

I know this sounds very interesting, but it is very delicious and one of the most popular salads at the BBQ.

Lake Powell Salad

We go to Lake Powell all the time, which is a very hot place.
And this salad does very well in the heat.
1 small pkg. cooked lemon pudding
cooked as directed on box. Microwave
and let cool
Combine: 1 Large package Orange Jello ( Sugar free)
1 Cup water (Boil)
Mix together then add:
2|3 Cup water or the pineapple juice from the pineapple.
 Add together mix very well.
Add: 1 Can pineapple tidbits
1 Can mandarin oranges
dump in dish. Mix with jello; dump in dish mix the jello mixture and
chill for 3 hours.

Orange Jell~O

1 cup boiling water
Add 1 small box of orange Jell~O
Let desolve and add 1/2 cup cold water
If your in a hurry you can rush this with ice.
Put in the fridge and let it set.
Stir it up a bit to break up the Jell~O
Add one small thawed container of Cool Whip.
Fold together.

Potato Salad

Potato Salad

Peel and boil potatoes until tender then drain and add

1 can olives sliced
boiled eggs sliced
Miracle whip
A couple of squirts of mustard
Onion salt
Salt and Pepper to taste

Bean Salad

Bean Salad

1 can green beans
2 cans garbanzo beans
1 can kidney beans
1 can black beans
1 can butter beans
1 can northern beans
1 can baby corn
1 can water chestnuts
1/2 cup chopped onions

Boil for five minutes drain off bean juices then add:

1 can olives sliced
3/4 cup sugar
2/3 cup vinegar
1/2 cup olive oil
1 teaspoon salt
1 teaspoon pepper
sprinkle garlic salt to taste
1/8 cup molasses
1/4 cup brown sugar

Marinate for 24 hours

You can add or change this according to taste. We love garbonzo beans so I use 2 cans. You really can play around with this recipe and change it to your own taste.

1 lb. crab meat
1 (8 oz) large shell macaroni
green pepper chopped
3-4 chopped celery
1/3 chopped onion
- Mix with Mayo, salt, pepper and seasonal salt  to taste.

Easy Fruit Salad

EASY FRUIT SALAD

1 container of softened cool whip
1 small container of cottage cheese
1 small package of jello (your favorite flavor, we like red.)
3 cans of pineapple chunks
2 cans of mandarin oranges

Or your choice of fruit..........

Mix together and chill. So fast and yummy, also pretty to look at!
