Yams

Yams

Peel, wash, and cut into small pieces~About 2 1/2 lbs.
Boil until barely tender~
Drain water and place yams into a baking dish~
Melt 1/2 cup butter and pour over yams~
Sprinkle 1/3 cup brown sugar over yams~
Drizzle 1/4 cup maple syrup over yams~
I always do this the day before, they taste better when they have a chance to absorb the flavor.  Then the day we are eating them I place them in a 350 oven until hot.  Place in serving bowl and serve.
My Hubby loves these!!  It is a recipe from my grandma Barbara.   I think of her every time I make them.  I use to ask her exactly how each time I made them.  I miss that.  I hope you enjoy them and create many happy holiday memories as you eat them!

Picking and Cleaning Peppers

These peppers are fresh from the garden.
When picking peppers, did you know that the ones with three bumps on the bottom are sweeter than the ones with four bumps? 

To clean peppers I just trim the top near the stem and twist it off.  Then cut down the sides and pull that out.  Wash them to get the seeds out, that is where the real heat is.  Some like it hot!

Stuffed Tomatoes



Stuffed Tomatoes

First, wash tomatoes well.  (About 6 or 7 large tomatoes.)  Then slice the top off and take the insides out with a melon baller or spoon.  Leave a little flesh next to the tomato skin so it doesn't break.  Save the insides of the tomato for later.  Turn tomatoes upside down on a tray to drain while you prepare the stuffing.

Send through the food processor-
1/4 large onion
1 garlic clove
2 Tablespoons olive oil
Insides of one tomato

In a skillet brown 1 lb hamburger
add your food processor mix
1 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper
insides of tomatoes

After hamburger is browned add
2 cups water
1/2 cup rice
Cook at a slow boil until rice is tender.  If you need to add more water that is fine.  After the rice is tender turn off heat and add 1 cup shredded cheese of your choice.  I used montaray jack and cheddar.
Stir the cheese until it is mixed in the hamburger mixture.  Then gently put the hamburger mixture into the tomatoes.

Place in a greased baking dish and bake uncovered at 375 for 30 minutes, or until tomato is tender.

Garden Fresh BBQ Corn

If this doesn't make you hungry. . .you must have already eaten!!
Seasoning for Corn
1 1/2 tsp. Oregano
1 tsp. Red pepper flakes
1/4 tsp. Onion Powder
1 tsp. Garlic
2 tsp. Sugar
1/4 tsp. salt
1/4 tsp. basil
1/4 tsp. parsley
1 Tbsp. Parmesan cheese.
Mix together I keep it in the fridge. 

Clean corn, spray with cooking spray and sprinkle with seasoning.  Roll up in tin foil and BBQ.

WARNING:  The pepper flakes are very strong in this recipe.  If you don't like hot, you may just want to leave them out.  This is delicious!!

Green Beans with Cashews

Zucchini Crisp

I know this sounds interesting.  It could be a good way to mix up using all the zucchini in your garden.  I was told about this recipe from a lady I just met, she said you can't tell the difference and her picky son liked it and asked for a second serving.  However, I will tell you the reviews at my house were mixed.  I was not a fan.  My husband liked it and wants me to make it again, but next time peel it.  If it was peeled it would probably take on the appearance of apple crisp also.  So here is the recipe for those of you that would like to try it. . .
8 cups zucchini ~ cubed, I picked out the center where the seeds were.
3/4 cup lemon juice
1/2 cup sugar
2 tsp. cinnamon
In a bowl combine the above ingredients and mix well.
Pour into a greased 9X13 pan ~ I didn't grease mine and it didn't stick at all.

Topping:
Melt 1/2 cup butter
1 cup flour
1 cup brown sugar
1 tea. cinnamon
Mix together and crumb over zucchini mixture.
Bake at 375 degrees for 45~50 minutes or until bubbly and zucchini is tender.

Sauteed Mushrooms


1/2 Tbsp. butter
8 ounces of mushrooms, about 2 cups
2 cloves garlic, minced
Worchestershire ~ a couple shots, about 5

Add butter to skillet, start to melt.  Add all other ingredients.
Stir to coat with butter, keep stirring off and on for about 10 minutes.
Enjoy.

Asparagus

1 Tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
1 Tbsp. butter

In a skillet cook the asparagus in about 2 cups of water and let boil for 8 - 10 minutes, until asparagus is still a little crunchy.  Strain out the water and add the rest of the ingredients.  Toss and cook on low for 2 - 3 minutes more until asparagus is covered with lemon and butter.

Green Beans

GARDEN FRESH GREEN BEENS

I love green beans out of the garden.  When it is that time of year we eat a big plate of them with butter and salt and pepper.  Yummy!!
This is a different varriation from boiling them in water.

We put some olive oil in the pan and heat.  When nice and hot add the green beans.  I use a heavey skillet from Wolf Man Puck.  I love his pans.  Then I salt and pepper and my favorite ingredient is Ginger.  I use about as much Ginger as salt.

Fried Squash

I love squash!!  This is one of my favorite ways to make it.

In a skillet put 1 1/2 Tbsp. butter and melt it.
Add one softball onion ~ I cut mine in rings so they are easy for picky eaters to pick out.
Wash and slice zucchini
I peel the crookneck and slice it up
No seeds are removed from any of the squash.  Use small ones and it isn't a problem.
Salt and pepper.

Look how good that looks!  YUM
This is how I usually make it.
My mother-in-law always adds cheese.
This is how we ate it this time and it was delicious. . .cheese makes everything better.  :o)
Note:  Sometimes she even crumbs up potato chips on top, and it is good.  I have had it with sour cream and onion chip crumbs and also plain.  She says it doesn't matter what kind.

Green Beans with Bacon

Cut bacon into pieces and cook, drain.
In a new skillet add beans, bacon and a drizzle of olive oil.
Cook until the beans are done.
Salt and pepper to taste if desired.

Creamed Cauliflower

Creamed Cauliflower

1 head of cauliflower cut into pieces, wash and then boiled until tender.
While cauliflower is cooking:
Mix
1/4 cup soft butter
1/2 cup flour
a dash of salt and pepper

When tender drain the water off and pour 1/2 cup of milk in pan over a very low heat.

Then add the mixture of butter, flour, & seasonings. Stir until creamed.

Serve and ENJOY!!
