Lamb Stew

Lamb Stew

Ingredients
1 lb or more lamb stew meat
canola oil for browning meat
4 carrots
5 potatoes
2 sticks celery
1 small onion
2 handfuls of frozen green beans
1 teaspoon salt
1/2 teaspoon rosemary
1/4 teaspoon thyme
1/2 teaspoon fresh ground pepper
1 teaspoon parsley flakes
Garlic powder
1 12 oz can beef stock
1/2 cup flour

Brown 1 lb or more of stew meat in a skillet with a small amount of canola oil on the bottom or the pan.  Then put 1 quart of water in a large pan and bring to a boil.  Add 4 carrots, 2 large handfuls of frozen green beans, 1 teaspoon salt, 1/2 teaspoon rosemary, 1/4 teaspoon thyme, 1/2 teaspoon fresh ground pepper, 1 teaspoon parsley flakes.  Sprinkle garlic powder until it lightly covers the top of the water.  1 small chopped onion, 2 chopped celery sticks.  Boil until carrots start to soften.  Then add 5 regular sized washed, peeled, and cubed potatoes.  Pre-stir in a small cup 1/2 cup flour in water.  Blend until smooth.  Slowly add the flour mixture into the cooking stew.  Add 1 can of beef stock.  (We used 12 oz can with no MSG.)

Ham & Beans

Ham and Beans

Soak beans of your choice.  We prefer Great Northern for this recipe.
You can make as large or as small as you like.  Be aware that for best beans you will want to let them soak overnight in a large pan.  The beans will swell, so use a large pan, cover with water.  Next morning, rinse beans and put fresh water covering the beans, cook on a low boil to high simmer until beans are quite tender.  Then add chopped up ham, or even a ham bone.  The bone brings in a great flavor!  Squirt 2 squirts of ketchup, add salt pepper to taste.  Also add, onion salt  about an hour before you think they will be done.  Beans take most of the day to cook but are not a lot of work.  They just cook while you do what you need to do.  You can use this same method in the crock-pot.  Hope you enjoy this warm winter dinner!!

Ham Chowder

YUMMY!!!


Veggies - potatoes, onions, carrots, & celery
Cream, flour, & butter
(for the sauce)

Veggies, Ham, & Sauce ready to combine!
Ham Chowder

Ham - chopped into small pieces
1 cup chopped onion
1 cup chopped celery
2 -3 cups diced potatoes
3/4 cup butter
3/4 cup flour
1 qt. Half & Half (I used canned milk)
1 1/2 tea sugar
1 1/2 teaspoon sugar
Dash of pepper

Boil vegetables until tender.  Place butter in frying pan.  Add flour, salt.  Mix Well.  Add cream and ham to cooked vegetables.  Stir in Butter and flour mixture.  Simmer 10 minutes or until thick.

When you cook a ham and have left overs this is a good way to use them.  However.........at our house we cook a ham so we can have ham chowder.  You know how it works.... I  4 times the recipe and we enjoy it when company comes or for any large gathering!!
