Oh, Soy! Burgers with Potatoes

2 pounds ground beef
3 tsp. chopped onion
1 tsp. pepper
Mix well and shape into burgers.
Place in a hot skillet and add 1/3 cup Soy Sauce, more can be added depending on your liking.  Brown burgers up.

These potatoes are fresh from our garden.  I boiled them with the skins on.  Choose potatoes that are about the same sizes so they cook evenly.  Drain.  Let them cool a bit, I add cold water to the stock pot.  Then slice them up on top of the burgers.  I added a couple off shots of Soy Sauce after I turned them so they would brown up nice.

Salt and pepper to taste.

Ingredients:
1 lb macaroni
6 tablespoons butter
6 tablespoons flour
2 tablespoons dry mustard
6 cups milk
1 small onion - finely diced
1 teaspoon paprika
6 cups shredded cheddar cheese
pepper to taste
2 teaspoons kosher salt

Topping:
6 Tablespoons butter
2 cups bread crumbs

Directions:
Preheat oven to 350 degrees F.

In a large pot of boiling, salted water cook the pasta until tender.

While the pasta is cooking, in a separate pot, melt the butter.  Whisk in the flour and mustard and keep it moving for about five minutes.  Make sure it's free of lumps.  Stir in the milk, onion, and paprika.  Simmer for ten minutes.  Stir in 3 cups cheese.  Season with salt and pepper.  Fold the macaroni into the mixture and pour into a casserole dish.

Melt the butter in a saute pan and toss the bread crumbs to coat.  Top the macaroni with the bread crumbs.  Bake for 35 minutes.  Remove from oven and let it rest for five minutes before serving.
Enjoy!

****note ~~ Next time I make this I will top it with sharp shredded cheese.

Rhodes Bake and Serve White Bread (2 loaves)
1/2 cup melted butter
1 lb roast beef sandwich sliced lunch meat
1 lb turkey sandwich sliced lunch meat
Swiss Cheese
Provolone Cheese
Shredded Cheddar Cheese

Instructions

Let dough thaw until soft.  Roll out with a rolling pin into a nice rectangle.  Cut with kitchen scissors 1/4 of the way in on both sides.
With a kitchen brush, brush melted butter up the center of the dough.  (The part you did not cut.)
Then place meat, cheese, meat, cheese until you get it nice and thick.  I like to top it with shredded cheddar just before I braid the bread.
Then braid the bread.
Let it rest about 30 minutes, then bake in a hot oven at 375 degrees until golden brown.
You can use any variety of meats and cheese you like.  You can use multiple types of meats in the same sandwich.  There is no limit. Use as much or as little meat and cheese as fits your families appetite! These are exceptionally good hot!  They are also a good prepare ahead lunch for Hubby~

Sausage & Rice Casserole

*On a personal note ~ When I lived at home, with my parents before I was married.  My Mom would always let us choose what we wanted for dinner on our birthdays and she would prepare it for us.  This is what I would choose almost every year!  It doesn't look or sound that amazing, however it is very good!!  My Dad raised registered Charolais (for those of you who are not familiar, they are beautiful big white cows!)  We had beef and we just took having beef steak, roasts, and such for granted!  So, as a girl who thinks 'beef is whats for dinner'.  Even though it isn't beef, it sure is a favorite!
Thanks Mom and Dad!!  We were always spoiled!!!!

Sausage & Rice

1 1/2 lb of sausage ~ We like the Jimmy Dean hot variety.  (With no preservatives.)
2 cup chicken broth  (I use Swanson with no MSG)
2 1/2 cups water
1 cup rice
2 stalks celery ~ chopped
1/3 cup onion ~ chopped
1 teaspoon salt
1 teaspoon pepper

Brown Sausage in a large skillet.  When brown add salt, pepper, onion and celery.  Cook 5 minutes then add chicken broth and water.  Add rice and cook until rice is tender.  Stir often.
Serve and Enjoy!!'
