Super Soft Caramel Popcorn

Super Soft Caramel Popcorn

2 1/2 cups brown sugar
1 cup light corn syrup
1 cup butter or margarine
dash of salt
1 14 oz can sweet & condensed milk
1 teaspoon vanilla

Large bowl of popped corn or puffed rice cereal~

1.  Combine sugar, corn syrup, butter, and salt in medium sauce pan: bring to a boil.
2.  Reduce heat to medium and stir in milk; cook, stirring constantly to soft ball sate (240 degrees)
3.  Remove from heat then stir in vanilla.
4.  Pour slowly over popcorn stirring until caramel is evenly distributed.
5.  Store in covered container.

Cream Cheese Toffee Dip

1 8 oz. cream cheese, softened
1/4 cup sugar
1/2 cup brown sugar
1 tea. vanilla extract
1 cup toffee chips

Mix together and put in the fridge for at least 1 hour.



I know there are a million recipes floating around the internet for something similar to this.  We love this to dip on sliced apples and graham crackers.  Hope you enjoy it too!

Chili Cheese Dip

2 14 oz. cans of chili
1 8 oz. pkg. cream cheese
1/2 cup grated cheese, I used Colby
4 oz. can of green chilies
sliced olives  I used an 8 oz. can and sliced them.

This is great with corn chips or as a spread on toasted bread.  My family likes this in scrambled eggs too.  This is very popular at my house.

If you are entertaining, you can make this ahead of time and just heat it up when it is time.

Pretzel Rods ~

Pretzel Rods

Pretzel Rods for dipping in melted chocolate or almond bark~
Chocolate or Almond Bark ~ for melting
These Pretzel Rods were dipped 3/4 of the way up in the chocolate.  Place on a piece of waxed paper for a few minutes then roll in crushed candy canes or whatever you like.
Other options are crushed Oreos, Butterfingers, Sprinkles or whatever you like the sky is the limit!
These are so fun for parties!  My daughter made these and she made a nice variety.  There was something there very one liked!!

Pretty Christmas Marshmallow Treat


Pretty Christmas Marshmallow Treat
1 bag of marshmallows
1 bag of miniature candy canes
1 box or regular size candy canes
almond chocolate bark

Crush up the box of candy canes and put on a plate. Melt the almond chocolate bark in a chocolate melter or over the stove.  When the chocolate is melted dip the marshmallow in half way.  Let it start to cool and then dip in the crushed candy canes. if you don't wait for it to set for a minute the crushed candy canes will not stick to the marshmallow. when the marshmallow is cooled completely, put a miniature candy cane in the marshmallow and you have your treat. works really good as hot chocolate stirrers!

Fall Trail Mix

.This is a fun trail mix for Fall.  You can add whatever you like and it will be a big hit for sure.  This one has both baby Swiss and cheddar Cheese It crackers, Rice Chex, Cheerios, Almonds, Pretzles, Candy Corn, Green Apple Candy Corn (if you haven't tried that one you are really missing out) and Pumpkins.  I put mine in zip lock bags for camping and it was enjoyed by all.  Hope you try it with your favorite snacks.

Marshmallow Popcorn

1 cup margarine
1/2 cup Karo syrup
1 1/3 cup sugar
Mix together in a saucepan.  Boil for 3 minutes.  Add 1 teaspoon vanilla.  Pour over 2 poppers (or 2 bags) full of popcorn, 2 cups cashews, and 3 cups mini marshmallows.

Sugared Cashews

1/2 cup butter
2 large egg whites at room temperature
1 cup sugar
1 Tbsp. cinnamon
1/2 tea. salt (if nuts are unsalted)
5 cups cashews

Heat oven to 325 degrees.  Melt butter in oven in a large jelly roll pan.
In a large bowl, with mixer beat egg whites until foamy.
Gradually beat in sugar until stiff peaks form.
Beat in cinnamon and salt.  Fold in nuts.

Spread nut mixture over melted butter in pan.
Bake 30 - 45 minutes, stirring 3 - 4 times to keep nuts separated.

Indoor Smores


3/4 Cup light Karo syrup
3Tbl. butter
1 pkg. milk chocolate chips
1 tsp.vanilla
1 10 oz. pkg. golden grams
3 Cups mini marshmallows
Mix syrup, butter,and chips put in microwave for four minutes.
Then add vanilla; pour over cereal in large bowl.
Toss until 1 cup at a time. BUTTER PAN! Press in pan. Let stand for one hour. ENJOY

Candy Popcorn

1 cup butter
1 tsp. vanilla
1 1/2 cups sugar
1/2 cup light corn syrup
Large bowl of popped popcorn ~ I used three microwave bags.

On low heat melt butter, add corn syrup and sugar.  Turn up heat to medium; bring to a  boil.  Boil for 6 minutes.  Remove from heat; add vanilla.  Pour over popcorn.  Stir and cool completely.
