Baked Beans

We really like beans at our house, and wouldn't you know it ~ leftovers freeze well or make great meals for camping.

16 oz. pkg. bacon, cooked, drained and in small pieces.
2 15 oz. can of chili ~ I used Hormel
3 16 oz. cans of pork and beans
1/3 cup chopped onion
1/3 cup Worcestershire Sauce
3/4 cup ketchup
3/4 cup brown sugar

Add all ingredients to crock pot.  I had mine on low for 3 hours and they were boiling.

Baked Beans

1 15 oz. can Pork and Beans
1 15 oz. can chili with meat
1 15 oz. can kidney beans
2 Tbsp. brown sugar
1/4 cup ketcup
2 Tbsp. green peppers, chopped
2 Tbsp. onion, chopped
Mix together and simmer in crock pot on low for 3 hours.  More brown sugar can be added for a sweeter taste.

I always double this, and it freezes well.

Twice Baked Potatoes



This is 12 medium size baked Russet potatoes.  I bake them until tender, about 1 hour in a 400 degree oven.  Let them cool a little then slice in half.  With a spoon take the potato out of it's skin without damaging the skin.  I put the inside of the potato in my kitchen aid.  Add 1 cup of soft butter, 3/4 of a container of sour cream (16 oz.) 1 teaspoon of onion powder, salt and pepper to taste, 1 cup shredded cheddar cheese.  Mix this well then put back in the potato skins.  Sprinkle more shredded cheese on top and melt.

This looks like I am cooking for an army but they freeze well.  It's a great plan ahead side dish!

Green Beans with Bacon

Cut bacon into pieces and cook, drain.
In a new skillet add beans, bacon and a drizzle of olive oil.
Cook until the beans are done.
Salt and pepper to taste if desired.
