Oh, Soy! Burgers with Potatoes


2 pounds ground beef
3 tsp. chopped onion
1 tsp. pepper
Mix well and shape into burgers.
Place in a hot skillet and add 1/3 cup Soy Sauce, more can be added depending on your liking.  Brown burgers up.





These potatoes are fresh from our garden.  I boiled them with the skins on.  Choose potatoes that are about the same sizes so they cook evenly.  Drain.  Let them cool a bit, I add cold water to the stock pot.  Then slice them up on top of the burgers.  I added a couple off shots of Soy Sauce after I turned them so they would brown up nice.

Salt and pepper to taste.

Venison Meatballs with Pasta

This pic didn't get along with me.  :o)
2 lbs. ground venison
1 cup milk
1 cup rolled oats
1/2 tsp. pepper
1 Tbsp. minced onion
2 Tbsp. minced garlic.
Mix together well.  Shape into meatballs.  Add olive oil to a large skillet.  Heat and cook meatballs.
Meanwhile, cook pasta.
I made two 1 cup packages of brown gravy.
Drain pasta and rinse.
Place on place, add meatballs and top with gravy.

My family hunts and we usually have venison in the freezer.  Any of our venison recipes would work great with beef.

Creamy Hamburger Casserole


2 lbs hamburger
1 onion, diced
Cook together and drain.
Add 2 cans cream of mushroom soup.
1 1/2 cups sour cream.
Mix well.

Press a can of separated biscuits into a greased dish.
Pour mixture over the biscuits.
Bake at 350 for 30 minutes or until biscuits are browned.

Nacho Plate Meatballs




2 pound ground venison (hamburger would work fine)
8 oz. grated Pepper Jack cheese
1 1/2 cups bread crumbs, I used Panko
24 oz. salsa, I used Pace

Mix all ingredients together well.
Spray baking pan and bake at 400 degrees for 40 minutes.

These are served on crushed corn chips, with green salad, sour cream and ranch dressing.  My family really likes these.  They would be great any way you make taco salad, and wouldn't you know they freeze great!

Nacho Casserole






Brown 2 lbs of hamburger.  
Note:  **This makes a large casserole.**
To browned beef add a bottle of your favorite salsa
1 can of corn, drained
1 small can of tomato sauce
Bring to a boil.

Spray a baking dish and add enough soft flour taco shells to cover the bottom.
Then a layer of meat.
Then whatever suits your fancy.  Shells, spread a thin layer of sour cream, meat sauce, cheese, using all ingredients finishing with cheese on top.
Bake 350 degrees for 30 minutes.

Meatloaf Patties

Do you love meatloaf and not always have time to make it?  Here is a great way to end that problem. . .meatloaf patties!!  MMmmm.

For these patties I used 2 pounds of hamburger
Bread crumbs, about a cup depending on the kind you use
Milk ~ about a cup, enough to wet your bread crumbs so that everything blends well together.
A sprinkle of sage
1 tea. minced onion
Salt and pepper
Mix well and shape into patties.  Fry up in your favorite skillet.
When almost finished add the topping.

Topping:
1/4 cup Brown sugar
1/2 tea. Worchestershire
1/2 cup Ketcup

Skillet Beef Enchiladas


1 pound ground beef
1 large onion chopped
1 cup kidney beans
1 cup chicken broth
1 package taco seasoning mix
1 cup corn
1 cup Minute Rice

Sour cream
grated cheese
Corn chips or steamed Tortillas













Brown beef with onion in large skillet until brown.
Drain off fat.
Add beans, broth, taco mix and corn.
Bring to full boil, reduce hear.
Simmer 10~15 minutes.
Stir in rice.
Cover.
Remove from heat.
Let stand until rice softens and absorbs moisture.

BBQ Meatballs ~ great for subs


2 lbs ground beef
1 cup bread crumbs
3 Tbsp. Worchershire Sauce
Milk, enough to make them moist ~ about 3/4 cup.
Mix together.
Saute' onions in Olive Oil.

Bake at 400 degrees for 35 ~ 40 minutes.
On a sprayed pan.



Cover with BBQ sauce, I used Sweet Baby Rays.  Add those yummy onions and your ready to eat!

Italian Meatball Subs





2 pounds hamburger
1/2 tsp. thyme
3 tsp. garlic
1 tsp. oregano
1 cup grated Parmesan
1 cup grated Mozzarella
1 1/2 cups bread crumbs


Enough milk to make them moist.  This all depends on how dry your bread crumbs are.
Spray baking sheet and bake at 400 degrees for 40 minutes.

I put them in a casserole dish and topped with my favorite sauce.

Heat the sauce up.
Toast buns.
Top with meatballs.
Sprinkle with basil and Parmesan cheese.
Enjoy!

These freeze well.  You know, I love to double them to freeze for another day.

Homemade Sloppy Joe's

Taco Seasoning
4 tsp. chili powder
2 tsp. paprika
3 tsp. onion powder
1 1/2 tsp. salt
3/4 tsp. oregano
1/2 tsp. pepper



Brown two pounds of hamburger. 
Add 1/2 of the above mixture.
Add tomato sauce to the consistency you like.

This freezes well.  I freeze it and take it camping all the time.  I love having food ready in the freezer.

Stuffed Cheese Hamburgers




Stuffed Cheese Hamburgers

Press the hamburger out into thin patties
Sprinkle with Salt and Pepper
Sprinkle finely chopped onion over hamburger
Place a generous amount of cheese on top of hamburger
Put another thin hamburger patty on top then press around the edges until sealed
Fry until cooked through
And you have a stuffed Cheese-burger
Enjoy!

Mom's Crunchy Dumplings


This is another great recipe from Mom.
Thanks Mom!

Brown together:
2 lbs. hamburger
salt and pepper
1 Tbsp. flour
2 cans water
1 chopped onion
2 cans creams of chicken soup
Simmer together for a few minutes pour in 9X13 top with dumplings.
Dumplings:
2 cups flour
4 tsp. baking powder
1 cup milk
1/2 tea. salt
1/2 tea. poultry seasoning
1 tea. dry onion
1/2 tea. celery seed
1/2 cup melted margarine cut shortening into flour and seasonings, add milk (make dough wet).  Dip teaspoons of dough into melted margarine.  I rolled mine in plain Planko bread crumbs.  Put on top of meat mixture.  I then sprinkled the left over bread crumbs from my bowl on top.

Barbecued Porcupines Meat Ball Dish



Barbecued Porcupines Meat Ball Dish
1 egg
1 lb ground beef
1 teaspoon salt
3/4 cup raw white rice
Form into meat balls~
1 can tomato soup
1 Tablespoons instant onion
1 Tablespoon Worcestershire sauce
1 Tablespoon brown sugar
2 Tablespoon vinegar
1 teaspoon prepared mustard
1 1/2 cup boiling water

Put meat balls into covered casserole, pour sauce over meat balls.  Bake at 400 for 45 minutes.  Last 5 minutes take the lid off.

Parmesan Meatballs



2 lbs hamburger
1/4 cup chopped onion
1 1/2 cup grated Parmesan cheese
1 cup bread crumbs ~ mine were plain
1 Tbsp. basil
At least 1 cup of milk.  This depends on what kind of bread crumbs you use.  You need to make it moist enough to form the meatballs.
Shape the meatballs and add them to a hot skilled that is coated with Olive oil.  Cook until done.
Enjoy!
