Olive Oil Potatoe Wedges

Olive Oil Potato Wedges

Scrub and dry potatoes.  Leave skins on.  Slice as if you were going to french fry them.  Get a baking sheet and spray it with oil.  Lay the potatoes out on the sheet and drizzle olive oil over them.  Then sprinkle with Kosher salt.  Bake in a hot oven at 400 until soft enough to eat.  It takes about 40 minutes in my oven.  Whenever I make these my daughter says.  "Oh yum mom, make lots!"  And everyone does like them at our house!
