Sausage Breakfast Wrap
You can make this recipe as large or small as you would like. I made it large so I can freeze some for later.
In a blender put-
18 large eggs
1 3/4 cups cream
blend then scramble in a pan with melted butter, salt and pepper to taste.
In a different pan cook your sausage until almost done, then add 6 baking sized potatoes that have been sent through the food processor. Also 1/3 cup onion also sent through the food processor. Season with salt and pepper to taste. When potatoes are cooked, add 1 can green chili's chopped, 1 and 1/2 cup shredded cheese of your choice.
I then put them in a tortilla and wrap them threading a couple of toothpicks to hold them in place.
Just pop one in the microwave and cook for 90 seconds if thawed. It is a good idea to get it out the night ahead so it's ready to cook faster.
*Note - I place waxed paper between each wrap so they come apart easier.
