Apple Cup Cakes with Yummy Carmel Frosting


Cup Cakes:
1 box Spice cake mix
2 eggs
2 tsp. vanilla
1 tsp. cinnamon
1/2 cup vegetable oil
2 apples, cut into pieces skins on is fine.
Mix together above ingredients, except for the apples.  This batter will be thick.  Add the apples and mix them in.  Pour into cup cake liners filling 3/4 full.  Bake 350 degrees for 20 minutes, or until cake springs back when lightly touched.  Frost once cooled.
Enjoy!



Carmel Frosting:
4 Tbsp butter or margarine
1/2 cup brown sugar
3 Tbsp. milk
1 cup powdered sugar
1 tsp. vanilla
Place butter and brown sugar in medium pan over medium heat.  Stir and cook until it comes to a boil.  Add milk and bring mixture back to a boil, stirring constantly.  Remove from heat and add remaining ingredients.  Stir until well mixed.

This these are perfect for lunches, the frosting sets up great and doesn't come off the cup cakes.

Note:  These are also great without the frosting.
