Soft Oatmeal Cookies
Boil 2 cups raisins in 2/3 cup water.
Cream together:
1 cup sugar
1/2 cup shortening
Beat in 2 eggs
Add 1/3 cup liquid off the raisins.
Sift together dry ingredients:
1 teaspoon cinnamon
1/3 teaspoon salt
2 cups flour
1 teaspoon soda
1/3 teaspoon baking powder
Add dry ingredients to other mixture. Then add 1 cup rolled oats, drained raisins, 1 teaspoon vanilla.
Drop by spoonfuls on un-greased cookie sheet and bake at 375 for 15 minutes.
Recipe may be doubled.
Enjoy!
Love oatmeal cookies but usually add dates. how long to boil the raisins?
