Skillet Beef Enchiladas


1 pound ground beef
1 large onion chopped
1 cup kidney beans
1 cup chicken broth
1 package taco seasoning mix
1 cup corn
1 cup Minute Rice

Sour cream
grated cheese
Corn chips or steamed Tortillas













Brown beef with onion in large skillet until brown.
Drain off fat.
Add beans, broth, taco mix and corn.
Bring to full boil, reduce hear.
Simmer 10~15 minutes.
Stir in rice.
Cover.
Remove from heat.
Let stand until rice softens and absorbs moisture.

  1. I just made these! It was quick...easy...I'm talentless in the kitchen & they came out great! My family was pretty surprised...edible food. Who knew? Thanks for the easy recipes.:)
