Rich Zuchinni Bread
3 eggs
2 cups sugar
3 teaspoons vanilla
1 cup cooking oil
combine and beat thoroughly
Add sifted dry ingredients;
1 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon soda
1 teaspoon cinnamon
Blend and add:
2 cups grated, unpeeled raw zucchini
3 cups flour
1 cup chopped nuts (optional) I don't do the nuts
Bake in two loaf pans or a 10 cup bundt pan. Bake at 325 for 60-70 minutes.
Cool and Enjoy!!
You can double this recipe and freeze it, it stores really well. It is one my families favorites!! It is good with or without frosting. I have the cream cheese frosting on this loaf. It is on our blog under frosting.
